Stir Fry Rice & Chicken w/Summer Squash

 

Light & Filling Breakfast

2 egg beaters
  scrambled in non-stick (fat-free) spray
A sprinkle of fat free cheese
Diced Tomatoes
2 slices Nature's Own Light Wheat Bread
  (40 calories a slice)
Entire serving is 150 calories!

Breakfast Parfait

½ cup Dannon Light'N Fit Vanilla Yogurt (40 calories)
4 Lg. Strawberries, sliced (23 calories)
½ cup Quaker Natural Low Fat Granola (157 Calories)
Add all ingredients to a bowl and mix together to make a yummy parfait.
Total calories: 220

Shredded Lettuce to desired amount
Diced tomatoes
Diced onions
Diced black olives
Mozzarella cheese (fat free)
Dab of sour cream (light or fat free)
2 Tbls. Salsa
1 grilled chicken breast diced (3 oz.)
Tortilla chips (small handful)

Mix together or arrange in layers. Enjoy an easy, filling Mexican salad.
Each big bowl of this is approximately 230 calories

1cup uncooked rice
½ cup chicken broth and ½ cup water (combined)
Cook rice in chicken broth
In stir fry pan or skillet:
1 Diced chicken breast stir fried in small amount of olive oil, fresh garlic
ADD- Zucchini, Yellow Squash, Fresh Mushrooms
1 dash Light Soy Sauce

Stir Fry until vegetables reach desired tenderness
Yummy!
